Lentil and Sweet Potato Chili

1 tablespoon oil
1 onion, chopped
3 stalks of celery
3 cups cubed sweet potato
1/2 cup carrots, chopped
1/2 pound ground turkey breast, cooked (optional)
3 cloves of garlic
1 teaspoon of sea salt
2 teaspoons chili powder
1/4 teaspoon nutmeg
1 teaspoon cumin
1/2 teaspoon cinnamon
1/2 teaspoon crushed red pepper flakes
1 1/2 cups dry red lentils
2 1/2 cups broth (veggie or chicken)
1 28 ounce can crushed tomatoes
1 14 ounce can black beans or kidney beans
3 tablespoons of lime juice

Saute onions and celery in oil. Add all other ingredients except the lime juice. Bring to a boil. Turn to low and simmer for about 30 minutes. Stir in lime juice. Enjoy!

Yummy! This inspires me to get in the kitchen and start cooking! No one can make the rolls like you do...sigh...so tasty.
