1 garlic clove, minced
1 cup chopped tomatoes
1 cup cucumber, peeled, seeded and chopped
1 cup chopped red onion
2 cups chopped fresh basil
1/8 cup chopped fresh thyme
1/4 cup olive oil
2 tablespoons balsamic vinegar
4 cups french bread chopped into bit size pieces
Mix all ingredients into a bowl. Let sit 15-30 minutes. Enjoy!

Honey Whole Grain Bread
2 1/4 teaspoons yeast
2 cups warm water
1/4 cup butter, melted
1/8 cup molasses
1/4 cup honey
1 teaspoon salt
3 cups whole grain spelt flour (or whole wheat)
1/4 cup barley flour
1/4 cup brown rice flour
1 1/2 cups unbleached white wheat flour
Place yeast in warm water and let sit 3 minutes. Blend in the remaining ingredients. Knead the dough for 8-12 minutes (until smooth and elastic). Place in a warm place for 1 hour (or until the dough doubles). Punch down dough and form into loaf. (I like to use stoneware bread pans). Let the dough double in size again (about 30 minutes). Bake at 350 degrees for 35-40 minutes. Remove from oven. Rub the loaf with butter and cover with tea towel. Let sit 15 minutes. Uncover and let cool completely. Enjoy!
